Bacolod is home to the unique delight called piaya. A flat, flaky pastry stuffed with muscovado and coated with sesame seeds, it is baked or cooked on an open griddle and often served hot. The “City of Smiles” is not just home to the happy population who reside there but also refers to the joy all visitors experience when sampling the many sweet delights made using Negros sugar. Business continues to thrive as no one can say no to the rows and rows of cakes, pastries and cookies teeming the shops like Felicia’s, Ann Co Cakes, Bob’s, Roli’s and Calea.
Bacolod is home to a robust pasalubong industry. From local biscuits, sweets, specialty pastries like the napoleones (layered puff pastry with sweet glaze) and the half-moons (sponge cakes topped with yema-like custard), to bottled sinamak (spiced and seasoned vinegar), and muscovado sugar, it is the place to visit when you want to savor delicious food and to find unique food gifts to bring home.
Negros province is known for some of the most unique and best-tasting pies in the country. El Ideal continues to churn out signature pies in their shop that has become a Silay landmark. On our last visit, we not only enjoyed a chat with the owners but also got a chance to savor their Egg Pie, Coconut Pie and the famous Guapple Pie! We also brought home bags filled with barquillos, bañadas, lubid-lubid and broas.
